1.today we're going to try out some of the Michelin selected restaurants in Saigon and see if they're worth it Well we have a special guest Let's go pick them up So I know there's a lot of about the whole Michelin thing There is a very big difference between Michelin stars and Michelin selected and we'll get into that later in the video but what we're checking out today are all Michelin selected spots I think there's only one restaurant in Saigon that actually has a Michelin star and that's Ang Right now we're in the center of District 1 picking up our special guest Today our guest is Phipe Trin from the popular Instagram page Whiskey and BCH His page is focused on cooking Vietnamese dishes He's been in Vietnam for the last four weeks with his father and today's his last day in Vietnam Hopefully it'll be a good one for him How you doing what's up how are you nice to meet you Yeah Yeah Nice to meet you You prefer whiskey or is it Phipe or what's Yeah Okay Where are we going first i don't know What's the plan do you want to do three or do you want to do two let's just go to the first one and see how we feel Okay You never been on a bike no Oh that's fantastic news Oh that's great news I'm so excited Oh good Yeah So you just sit down anywhere you want You put your feet on the pegs You can hold on to the back You can hold on to my shoulder You can hold on to nothing In In 5 seconds you're going to feel so incredibly comfortable Nothing to it You ready all right Nothing to it How's it trip been for you great Yeah You were just in a lot All right So it's somewhere on the left over here somewhere You've never been here right no No I never been here Soya like number one or soya gulp or something like that I don't know From all I understand it's some kind of sticky rice or chicken on it This is it Yeah So yeah your first try is pretty good right yeah that was awesome Thank you So have you had chicken rice before have you had soy before uh yeah like sweet rice or Yeah but I mean this is sweet but savory Yeah Yeah Sigy rice but savory Let me see what kind of soy they have They're known for their chicken you said I mean that's the name of the restaurant I don't know what they're um particularly known for Yeah Okay Yeah Oh thank you It's always hard We're going to get like three dishes today It's always hard to uh pace yourself in this sort of environment Oh that's cool And I've never seen too They have basically like a chicken oju or of like they're roasting the chicken just right on the table So you can load up your rice with extra chicken boost That's cool We are at Soya number one in district 1 We have chicken we have quail egg we have young egg like the egg inside the chicken And I have some chicken as well So have you had the savory sticky rice before or not yet not really No not yet You know typically I don't see it with chicken too much Usually it's like the sliced pork or maybe with shaved green bean on top Uhhuh Okay So how do I eat this no no big secret This spoon I'm probably going to go with a little bit of this sauce and then uh that's it You just go for it Yeah Every time we used to eat sticky rice we usually ate it with our hands and stuff and Oh really I think the hard part is going to be not to eat too much Yeah Especially you know this sticky rice gets heavy Well that is savory It's really good That's pretty damn tasty Yeah Yeah And there's already a little a little bit of chili on here Little crunchies on top too A little fried shallot All the fried shallot I like the the flavor of the actually great The flavor of the chicken juice is great Yeah I like that there's heat already in here That part's pretty cool So that's the egg This one right here It's literally the egg yolk without the white It's the egg yolk before the shell grows around it And it has a firmer texture to it I love it I think it's amazing That's pretty cool right i mean it's very simple It's just an egg but it has a slightly different thing about it Yeah The texture is like a little chewier a little firmer a little bouncier What do you know about Michelin does that mean anything to you have you done anything like that no I mean like I don't usually go by like this Michelin stuff We went to a few around Son and I don't know why we tried a couple but yeah I I usually try not to be guided by this too much I try to like go for like local spots and like whatever like my friends recommend Yeah Like the star is different cuz before I was a fine dining cook or chef So Michelin was a big part of my life before It was always like the goal And I get frustrated cuz I know people get confused about Michelin selected and Michelin star and they think they went to a Michelin star They think that this is like Michelin star This is not It's not When I heard Michelin coming through here I eat in Saigon every day all the time And I could not tell you this is the best one Like I'm not going to tell you anything is the best I'm going to tell you it's the best I've had or my favorite one right now But to say that like this is the best kamasya I'm sorry not coming out Soya in the city That's crazy to me That's super crazy Maybe I'm wrong Maybe I'm wrong And that's part of why I'm excited to do this today But I just think like they went on the list of like hey what's the other things people are talking about is good Oh that's now we're putting that on the selected list But this is actually a good one No it is really good They probably only try a couple There's no way that they try everything to try to find the best one either Yeah To really be able to give some distinction to a place they have to live here for years They have to be doing years of research And I know they come in here in a month and just do it and get it done and move on to the next city or country to um fill their list up But this is really good to a guy Good enough that I want to eat it all but I'm not going to I know I have to save myself Oh no I was going to say this is 5second No there's no 5-second rule My favorite bite just fell on the ground Why is it so round and rolly yeah there's no 5-second roll in the streets of Vietnam That's not That liver is good Oh yeah Really good There's very little seating here though Very little seating If you came here with a six stop you might struggle Oh yeah Wow I'm going to eat this whole thing So good Even the rice by itself Yeah the rice It's very good Like this is actually pretty great I think But to only put one to only select one soy spot or one sticky rice spot There's a lot of places that are at this level that I've had around so why not put them on the list too all right I got to stop dude I got to stop I do have to stop Say what what do you give this spot you like it it was pretty good What about out of a 10 7 eight I mean I never had it and it was pretty good I was like damn that was pretty good Let's go eat more We're looking for alleyway 14 No I've been here once for an early date with my wife when we first started dating And I know it's a big spot There's There it is It's called Mean Guy Okay Yeah this looks familiar Yeah it's super packed This spot's super packed Yeah this spot is like an for sure Emily John Mly oppo Yeah I've never seen that drink before Guava with salted plum That's cool This place is famous for you know the glass Yeah I think this place has been open for like 30 years maybe 50 I don't know It's definitely decades This place is always so busy packed Taste the broth first It's very savory Very savory You want salt and pepper sure You dip your chicken in there Yeah you can use salt and then squirt the lime inside and then you can dip your chicken right into there So we got this with a glass noodle but you could get this with a f noodle You can get it with um instant noodle You can get it with an egg noodle They have any noodle you want And it's super simple Broth noodle chicken some green onion cilantro This chili sauce has got me super It's more interesting The color is nice I mean it's definitely homemade I like that part Yeah fermented sour It's like a northern style It's good I don't know if I want to destroy my broth Not destroy but I don't know if I want to color my broth with it Now this is definitely the got that the garden chicken Do you like that the really chewy chicken You appreciate that i don't mind it My dad would think it's chewy I think your dad would think it's chewy Probably I think he would I would have thought he would have thought "Oh this is the real chicken." Is it how you remember it or yeah I remembered it being super simple And it is super simple I think you might be disappointed if you think you're expecting something you know but if you're just looking for a very very simple chicken soup this is a very great very simple chicken soup The broth is I don't want to say deep cuz there's not a lot going on but it's a very intense chicken flavor and that's kind of it So what do you rate this dish now seven Seven It's pretty solid Yeah I think I would probably prefer this as a porridge If they sold this with jao I think I would like that better Um because it is very comforting I think Jiao is probably the most comforting dish you can have Yeah I do like the chili sauce a lot though Oh you're going for it Yeah I don't particularly like fur very much I think fur is kind of boring compared to a lot of the other soups that are here But now when I I'm doing a thing where I keep asking people where to eat next And of course so many Vietnamese keep telling me to f spot So I'm eating a lot of f recently And now I'm appreciating it more and more I do start to like it And they are freaking working back there They're putting out a lot of bowls of soup very very quickly Oh ding ding I will say if you do get on this Michelin selected list it does seem to help You do seem to get more tourists coming to your location So if you're a restaurant probably a good thing if you can get on here Let's go somewhere back here District 4 is crazy if to like really know it Well see I think we're going to be okay This is it Yeah Well we're at the end of an alleyway Smells good Do you know what you want in terms of texture or like bowl i don't want a big bowl No I want a small bowl And it's just the classic ball Okay Yeah Yeah It means it's pretty good Oh so it's okay It's so fun though honestly Like I It really is fun Usually just get people smile and then I'm happy you know it's just it feels good Of course like it's getting better It still sucks now It's impressive but it still sucks Like I can't really talk to people but it's really fun to just have any improvement at all Any words are so helpful Come on So have you had bumball before yes Okay Quite a few bowls so far I like the setup I like that pot That's a cute pot over there Do Would you say you're a f guy or bumball guy i like beef fa more I think But I appreciate blue because it's so much more flavor It depends on the day because sometimes I'm like is so boring compared to this I agree I mean of course I think every foreigner um has fuff and they're like "Wow it's amazing Oh my god Oh my god." And then we actually come here like there's so many kinds of soup and then I thought fur was boring For me on a early morning cold early morning or a late night like F hits pretty damn good I love it This is our last bowl today Come on They got ben FL too Wow All right That's definitely the last thing today That's it This is Looks very meaty too It's quite heavy All right So we're going to eat bumbo Bon is round rice in a ball is beef And Hoy is a city that it comes from I think this is one of the best soups in Vietnam And I'm very excited to see if this is a good one I'm sure it is Smells good It looks good Yeah Let's try it There's people looking It's a solid bomb This is good I do like the broth here This is a solid broth Have you used these chilies i mean these these are heavy chilies They will they hit you And I think if you want pure heat this guy would probably be your your bet I do feel like um overseas Vietnamese they they always want bomb to be super super red And I think that's interesting And I don't necessarily have that as a defining characteristic of the bowl Definitely I want to see red oil on the top Definitely And sometimes I don't see that but I see I've seen bumball in America sometimes where it's like red red Yeah And then I think people are accustomed to that color which is interesting to me You know this is Saigon style bumba hoy Have you ever had hoy style bumbo like what's the difference between the two it's very simple like bomb hoy and hoy is much less intensely seasoned and it's has cinnamon There's some like sort of fur elements to it and it has a thin rice noodle instead of a thick rice noodle like this And they don't serve it with the water spinach Just banana flour and bean sprouts Sometimes lettuce So it's it's a very different bowl It's like northern southern f kind of thing It's a totally different experience I prefer Saigon style bumba That is my ideal bowl But I think bumba is one of the best dishes there is For me it's top The sliced beef is good Very tender That's the jakua That's like a crab ball It's good Yeah I think the sliced beef is really good The beef ball is really good I like the crab ball too Really good It has a lot of crab flavor in it Usually they're kind of pretty minimal just like a normal jab but this one's got a lot of crab flavor That's cool Wow It's definitely very hard when you're three bowls in cuz there's no longer any hunger involved anymore So it makes it easier to purely evaluate it but there's also no satisfaction of like oh I'm hungry and eating But I think this is a pretty damn solid bowl It is pretty solid But if I was hungry Yeah Oh it' be great Yeah See if we can get a rating It's uh It's so hard It's so hard to rate this just cuz we're full I think it's an eight I think if I came here hungry it might be a nine It's hard to say but it is a very very good bowlable ball This is a solid bowl I would definitely come back here And this will be a spotic that I bring people to in the future That's good And I like the air too I like being at the end of an alleyway It does feel like a hidden gem kind of vibe to it That part's cool Yeah Let's say eight and a half Give a solid I do like Yeah cuz like most of the time it's like on a busy street and literally you're like Yeah the vibes are good Yeah May 8:30 close I guess I got to eat a fla too We'll try fla It's funny how fla became like the dessert of Vietnam Interesting Do you have any opinion about a Michelin recommended spot now that we've tried three today does Michelin recommend it mean anything to you do you trust that i mean the spots were really good today but like I really don't know Is it the best food you've had in Vietnam i mean it's pretty good It's pretty solid So yeah I I think it's a pretty good guide baseline guide like if you needed to go somewhere Yeah I think you can trust the recommendations on the spot Did you have a favorite dish today i think it was that sweet savory rice The first thing the soy guy Yeah the soy guy was really right And your page on Instagram is whiskey and bch Whiskey and b And what kind of content do you make there just usually like Vietnamese everything we had today was quality I think it's safe to expect anything you're going to see on the Michelin recommend it is uh it's going to be a good dish for me The soy guy the sticky rice was very good Probably one of the best chicken sticky rice I've had Although that's not really a popular dish So it's like that's kind of an easy thing to get to the top of my personal list because there's not many around Saigon The manga or the chicken with glass noodle I just think that's okay I always saw that's okay But obviously the locals freaking love it cuz that place is always packed To me it's a little bit standard It's a little bit boring but it is quality I'll give it that I think the bumba is probably a great bowl of bumball but I was just full so I can't really say But it's at least an eight out of 10 It could be a nine I like the vibes of that area It's a really quiet back street so I would definitely go back to the bumba And hopefully I'll go back again when I have an empty stomach so I can really appreciate it for what it is But that was a good bowl But I mean what I don't understand is like I don't know why those particular ones are on the list and there aren't other ones on the list You know it's not like those are any more special than any other spots that I go to on the regular I can name hundreds of spots that are at that same level than these that we went to today I just get a little frustrated when some outsider comes into this city who hasn't been here for years trying to figure out or find the best spot and just just picks a few spots off and puts on the list and all of a sudden they get elevated to a different level when there's so many spots that are at that same level I get a little frustrated but I'm also an So just don't worry about what I say But if you're a traveler and you're here for a few days and you just need a list to work from that's probably a good list to go off of Everything in there everything we tried today is good And the other spots that I know on the list they're all good So just to clarify like Michelin stars and Michelin recommended are totally different things If you don't know about my background like I've always been a fine dining cook I've always worked in fine dining kitchens As a young kid I always wanted to work in the best restaurants in the world So Michelin was very to me as a young kid Our Michelin stars originally before they came to Asia were really only for fine dining upscale super premium uh atmosphere and when they went to Asia they kind of ruined that in my personal opinion but that's just my personal opinion So the stars are really kind of for the fancy stuff and the stars didn't really work for kind of street food So then they came out with bib gourmand and Michelin recommended So uh I really dislike what Michelin has done in the last couple years cuz they made everything very confusing But just be aware that Michelin recommended is not a Michelin star totally different
